If I say Aj I cant make it, he would start cribbing, I was thinking what to do, suddenly found baby corn that I got, so changed the plan with. Palak Corn or Spinach Corn is healthy & delicious Indian Curry made with Sweet Corn Kernels cooked in a spicy gravy made of pureed Spinach, onions and tomatoes. Palak corn also known as makai palak is a healthy and tasty Indian curry made from palak (spinach) and sweet corn kernels.

    Instructions to make Palak and baby corn curry:

    1. Cut and rinse palak. Drain all water. Add palak & salt in cooker. Pressure cook it until 2-3 whistles. Once done let it cool.
    2. Once cooled grind it in a fine paste.
    3. Cut onions. Boil onion, garlic & ginger. Once cooled grind them.
    4. Boil tomatoes & green chillies separately in a pot. Once cooled grind them.
    5. Heat Kadhai. Add bay leaf, cardamom & cloves. Dry roast them. Add onion paste. Saute till golden brown.
    6. Add tomato puree. Saute them until it seperates from Kadhai.
    7. Add all spices. Now add baby corn. Mix well. Saute it for 2-3 minutes.
    8. Now add palak puree. Mix well. Bring it a boil.
    9. Remove from gas. Serve hot with tandoori roti.

    This palak corn curry is a variation of the Palak paneer, but more creamy as I have added ground melon seeds and cashews in the curry. Instead of sweet corn, regular corn or even fresh green peas can be added. This corn palak curry goes very well with Naan, rotis or jeera rice. Corn perfectly complimented the Palak gravy and it was liked by everyone in the family. This recipe is very good for kids as well as it is not very spicy and is super healthy.
