Duck is generally roasted for several hours in the oven, which may seem a long time compared to roasting a chicken or turkey. This is so that the fat has time to melt away completely and for the skin.

    The ingredients needed to make Roasted Duck:

    1. Make ready 1 Duck (about 6lbs)
    2. Take 1 Onion
    3. Take 1 Orange
    4. Take 1 dash Freshly Ground Peppercorn
    5. Get 1 dash Salt
    6. Make ready 1 dash Parsley or Fresh Parsley Clove

    Instructions

    Instructions to make Roasted Duck:

    1. Preparation: - -Make sure duck is fully thawed. - -Clean out Giblets. - -Trim loose skin around neck of duck. - -Trim excess fat around main cavity. - -Rinse whole duck under cold water. - -Pierce JUST the skin of the duck, do not pierce the meat. (This helps with the skin getting crispy) - - Preheat Oven or Grill to 350°F.
    2. Quarter the onion and orange, then stuff the duck.
    3. Season duck with freshly ground peppercorn, and salt.
    4. Put the duck directly on your grill, or on a baking sheet if you're using the oven. - - Cooking time should be approx. 2 1/2 - 3 hours. (Make sure the meat temp reads 160 degrees).
    5. After 2 1/2 hours, sprinkle parsley on top of duck, and increase heat to 375 (this will help crisp the skin and also add color to the duck.)
    6. After 30 minutes at 375, remove the duck and cover with a foil tent, and let stand for about 15 minutes. - - Serve and enjoy!!

    Make sure you completely defrosted Duck in the refrigerator for a couple of days. Remove the giblets from inside the duck. Roast duck is a bit of an effort to make but well worth it.
