    Namak Para also known as crispy nimki or namkeen pare. it's very crispy and crunchy namkeen for tea time. Its one of the most common snack you will find in. Namak paare is pastry like crunchy snack lightly seasoned with carom seed.

    2. Get 1 cup semolina

    I made this snack for Diwali but didn't get the Namak pare as it is called in Hindi is lightly seasoned with spices like ajwain [carom seeds] and. Namak para (or namakpare), also nimki or nimkin (or namkin) is a crunchy savoury snack eaten in the Indian Subcontinent. It is also referred as Mathri sometimes in some parts of Punjab and Uttar Pradesh. Namak para is ribbon-like strips of pastry (made up of refined flour, oil and water).


    Instructions

    Steps to make Namak Pare:

    1. Firstly,mix the thymbol seeds,salt,semolina and flour together and rub the clarified butter in lightly so that the mixture resembles breadcrumbs.
    2. Knead into a stiff dough with cold water.Cover dough and set to rest in a cool place for at least 15 mins.
    3. Roll out the dough into a 1/4 or 1/8cm in thick sheet.Prick with a fork all over the surface.
    4. Cut into narrow strips of desired size.Heat the oil in a kadhai till a piece of dough dropped in,rise to the top at once.
    5. Then,put in as many strips as will fit in comfortably.Turn once,and lower heat to medium.Fry till light brown on both sides.
    6. Lift out and place on absorbent paper.Fry the rest similarly,increasing heat before adding a fresh slot.Cool and store in an airtight container.
