Get 1 cup maida
Prepare 1/4 cup curd

Get Oil for deep frying

Get 1/2 cup rice, washed and soaked for half an hour
Make ready 1 cup water

Chole Bhature also known as Chana Bhatura is one of the most popular Punjabi dish liked almost all over India. Chole stands for a spiced tangy chickpea curry and. First prepare the dough for bhature, in a mixing bowl combine together maida, oil, curd, fruit salt and salt, mix well. By adding little water knead a smooth dough, cover and keep it for 3 - 4 hours for fermentation.

Heat ghee in a pan and add jeera, cloves and cinnamon, let them splutter, then add soaked rice. Roast on low heat, stirring continuously with light hands, until the ghee coats the rice properly. Then add salt and water, cover and cook, until all the moisture evaporates and the rice is properly cooked. It us ready to serve.
