    1. Get 1/2 cup chickpeas (kabuli chana)
    2. Get 1/2 cup bengal gram(chana daal)
    3. Get 1 and 1/2 spoon coriander seeds(dhania)
    4. Make ready 1 small bunch fresh coriander(dhania patta)
    5. Prepare to taste Salt
    6. Make ready 1/2 inch cinnamon(daalchini)
    7. Get 1 and 1/2 spoon cumin seeds(jeera)
    8. Get 4-5 cloves(laung)
    9. Get 2 green chillies
    10. Get 4 tsp ghee
    11. Get 1 medium onion(pyaz),finely chopped
    12. Prepare 1 tsp ginger paste
    13. Take 1 tsp garlic paste
    14. Get 1/2 tsp dried mango powder
    15. Prepare 1/2 tsp garam masala powder
    16. Take as per taste Black salt
    17. Prepare 1/4 tsp red chilli powder
    18. Prepare 1 pinch turmeric powder (haldi)
    19. Make ready 1 pinch baking soda(mitha soda)
    20. Make ready 1 black cardamom

    The main ingredient is a variety of chickpea called chana (เคšเคจเคพ) or kala chana ('black chana').     Steps to make Chole dhaniya masala:

    1. Soak the chickpeas overnight.In the morning add 3 cups of water little salt..and a pinch of baking soda into it and pressure cook for 7-8 whistles.
    2. Now take the chana daal and pressure cook it for 4 whistles with a little bit of salt and turmeric powder, meanwhile, you make a paste of Coriander leaves with 2-3 green chilies.
    3. Heat 3 tsp of ghee in a pan. Add the onion and saute for 3-4 minutes or till golden. Add the ginger-garlic paste and continue to saute for another minute.
    4. Add the spices powder..dried mango powder..garam masala, black salt, coriander paste into it. Fry it with little water in low flame for 5 minutes
    5. Lightly roast and powder the cinnamon, cumin seeds, coriander seeds, black cardamom and cloves
    6. Mix this roasted powder to ur gravy and saute it well.
    7. Now add chickpeas and Bengal gram and mix adjust the salt and half cup water and let the mixture come to boil..simmer it for 5 minutes in low flame.
    8. After 5 minutes. Now Transfer this into the pressure cooker for 4 whistles.
    9. After that heat, the remaining ghee in a ladle, take it off the heat and add red chilli powder immediately pour over the chickpeas.
    10. Serve hot with puris.
